Who doesn’t love a 2 ingredient quick, easy, and nutritious meal that can be thrown in the crockpot? As well as being a paleo complaint recipe..I know I do! I think crock pots are one of the best inventions that simplifies clean eating and meal prepping!
This week we are going to be sharing a juicy chicken recipe that is great for tacos, salads, paired with vegetables, topped on a sweet potato, or served just by itself. The options are really endless when it comes to combinations you can make with our salsa chicken.
My Mom has been making this crockpot chicken since I was in middle school and it never gets old. With two ingredients it’s the easiest, quickest, and unmessupable recipe I have shared yet. If you’re not one for cooking this is the recipe for you!
One of my favorite ways to meal prep nowadays is making a meat like this recipe and a few different vegetables like sweet potatoes, broccoli, or cauliflower. So you can switch up the veggies while keeping your protein the same throughout the week. All while not getting tired/ bored with your meal prep! It’s a simple and cost-effective way to make meal-prepping painless and easy.
I used to overcomplicate meal prepping thinking I had to make extravagant meals that took hours. But to stay consistent I rely on recipes like this that are so quick, cheap, and always delicious to keep me eating clean and reaching my goals!

Shred your chicken
After my chicken has finished cooking I will take it out of the pot, shred it, and pop it back in on warm for 30 minutes. This step is crucial in making your chicken juicy and not dry. I used to skip the whole shredding and adding it back in the crockpot because I thought it was just an unnecessary step. But I was wrong. If you don’t shred it and add it back into the pot the inside of the chicken breast is dry and not as flavourful. Just trust me on this one. Do the extra step and it will make your meal prep enjoyable all week long.

2 ingredient Paleo crockpot chicken
Ingredients
- 1 pound Boneless skinless chicken breast
- 24 oz Paleo salsa of choice
Instructions
- Add your chicken breast into the crockpot
- Cover with salsa
- Cook on low for 6 hours or high for 4
- Once chicken is done cooking pull Breast out onto plate. Shred then add back into crockpot for 30 minutes on warm.
- Serve with sweet potato, veggies, or topped with avocado.
