Summer means it’s time for the perfect chicken salad recipe… that is paleo compliant. This week I am going to be sharing my blueberry chicken salad recipe which is sure to be a favorite. Chicken salad is one of the easiest and quickest meals you can make. It’s hard to mess up but there are a few tips that can take your chicken salad to the next level.
Rotisserie or oven baked chicken?
Rotisserie chicken will always be the best for chicken salad in my opinion. But rotisserie chicken can be expensive depending on how many you need to make your desired yield. Still, a Whole Foods or Publix rotisserie chicken will be my first pick over oven-baked or boiled chicken. I think rotisserie chicken is juicier and tastes better but if you are choosing to make your chicken at home make sure to follow the recipe to a T. I have got the formula for oven-baked chicken that isn’t dry down to a science.
I’ve been trying to make all my food at home so breaking up with my favorite Whole Foods rotisserie chicken has been hard. But with a good recipe, you won’t notice the difference!
Homemade Paleo mayo
I think homemade always tastes better especially when it comes to condiments. Making your own mayonnaise can sound intimidating but it’s far from it. If you have an immersion blender it’s time to put it to use with our easy paleo mayo. Not to mention the cost of a jar of Paleo mayo eating up your grocery budget. Making your own Paleo mayo is cost-effective and surprisingly takes dishes to the next level. All you need is:
- ¾ cup oil of choice (I choose avocado)
- ¼ tsp salt
- 1 large egg
- 1-2 tbsp dijon mustard (spicy if preferred)
- 1-2 tbsp fresh lemon juice
Add all ingredients into a tall container (adding your oil last), then make sure to put your immersion blender at the bottom before turning it on. Mix for 30-45 seconds and you’re done!
It takes less than 5 minutes and you will never want to pay eight dollars for a jar of Paleo mayo again! My mom has been making this Paleo mayo for years and it’s still a favorite!
When choosing to share this recipe made me think back to a couple of years ago when heating up pre-cooked food was a lot of “cooking” for me. Recipes like this chicken salad are a great place to start in the kitchen because of how simple they are. And they give you a chance to start developing your own recipes. Almost anything tastes good in chicken salad its a great quick and easy meal that can help you get in the kitchen!
And when you try it with the homemade paleo mayo you won’t want to go back to pre-made dinners. There’s nothing like a home-cooked meal! Let’s go ahead and jump into the recipe.
Paleo blueberry chicken salad
Ingredients
- 2 lb shredded chicken breast
- 1 cup Paleo mayo
- 1 1/2 cup Blueberries
- 1/2 Onion petite diced
- 1/2 cup Chopped walnuts
- 3 tbsp Red wine vinegar
- salt and pepper to taste
Instructions
- If cooking chicken preheat oven to 350. Lightly coat chicken with oil of choice and season to taste with your preferred seasonings. Bake for 25-30 minutes (internal temp at 165). I eyeball it making sure there is no pink coloring inside the chicken. Once done let sit to cool then shred and store in fridge for 25-30 minutes.
- Add all ingredients into bowl and mix. Leave in fridge for 30 minutes and then serve!
