With summer coming up right around the corner I’m doing my best to eat clean. This week I decided to share one of our favorite paleo compliant recipes that is quick, easy, healthy, and most importantly tasty. Our paleo crockpot chicken tacos/ fajitas have been one of our family’s staple meal prep recipes for years.
Paleo cooking can sometimes feel repetitive. This is one of those meals that no matter how many times you make it. It’s just as good as the first and doesn’t leave you wanting something else. It also helps you can eat this chicken on top of just about anything!
If you’re a crockpot hater this recipe might change your mind! Cooking can be difficult and draining for those with Autoimmune diseases and even for those without. Crockpot meals are a great way to quickly make delicious and nutritious meals for your family. But I know some people do not like anything that comes out of a crockpot. That’s why I chose to share this recipe that is sure to win over anyone and does not taste like it came out of a crockpot.
This is a realistic meal for my family – If It’s not something I can quickly whip together it most likely won’t be a dish I cook on a weekly basis. I look for meals that are so simple even I couldn’t mess them up. Paleo cooking is usually the opposite of quick and easy – it’s 100% worth the time and effort it takes. But sometimes I just want a quick and easy meal. This recipe is kind of a unicorn recipe for paleo cooking. It’s so easy it doesn’t feel like a paleo meal but it is!
Another reason to love this recipe is because it saves so well and can be topped with just about anything. Meal prepping freaks out a lot of people…understandably so depending on the food you choose to make. Not every dish saves as well as another. But chicken in general is a pretty safe option when it comes to meal prepping. Throw this dish in your fridge and you can eat it numerous ways; on top of a salad, with a sweet potato, topped with veggies, on soft tacos, and on hard tacos! The options are really endless, it’s even good by itself!

Paleo crockpot fajitas
Ingredients
- 1.5 pounds Chicken breast
- 2 Large bell peppers sliced I used red and green
- 1/2 cup broth for moist chicken
- 1 bag Romain lettuce hearts washed and dried
- 1 Avocado sliced
- 1 tbsp Chili powder
- 1 tsp Ground cumin
- 1/2 tsp Cayenne pepper
- 1 Large garlic clove minced
- 1/2 tsp Salt
- 1/2 tsp Chili garlic sauce if you want it to be spicy
- 2 tbsp Olive oil
Instructions
- Add chicken to bottom of crock pot, drizzle olive oil on top, and add bone broth
- Place onion bell, peppers, chili garlic sauce, and all seasoning on top of chicken
- Cook for 3-4 hours on high
- 30 minutes before chicken is ready. Take chicken breast out and shred. Place back in crock pot for additional time
- Serve on romain hearts, with sliced avocado, and lime juice.
