I’ve gotten a few requests to share my protein banana bread recipe and I couldn’t be more excited. I would have posted it sooner but I have been tweaking this recipe for a few months now. I am very picky when it comes to banana bread. The consistency has to be just right. Paleo cooking, specifically dessert recipes, can be tricky. Making it hard to come by recipes I will make more than once. Most of the paleo dessert recipes I have tried are either too bland, slimy from coconut oil, or taste too much like almond flour. I decided to use my banana bread recipes and swap out the non-paleo-compliant ingredients.
After months of tweaking the recipe, I have finally made a paleo dessert that is a staple in my meal prep rotation.
Finding paleo recipes that are just as good as the real thing has become my mission. After months of trial and error in the kitchenI’ve found most of my favorite meal recipes. Recipes like this banana bread have made me start to love cooking. Food plays a huge role in my journey to heal my autoimmune diseases. Although it’s just a piece of the puzzle staying on a diet that felt extremely restrictive to me at one point. Made it hard for me to even like cooking when I wasn’t always enjoying the meals I was eating. Now I know I was cooking the wrong things. From the moment I get this banana bread in the oven I am waiting to hear my timer go off! I’m not going to keep yall waiting any longer. Let’s go ahead and jump right into the recipe!
Paleo protein banana bread
Ingredients
- 2 over ripe bananas
- 2 cups Almond flour
- 2 eggs, large
- 1 tbsp coconut oil, melted
- 3 tbsp maple syrup
- 20 grams protein powder
- 1 tsp vanilla extract
- 1 tbsp cinnamon
- 1 tsp baking soda
- 1/4 tsp sea salt
Instructions
- Mash up bananas (This effects the final product and texture. Make sure to mash as well as possible)
- Add your melted coconut oil, maple syrup, and vanilla extract to your mashed bananas. Mix until combined
- Add all remaining dry ingredients into your bowl. Mix thoroughly
- Move mixture into a 8×8 baking dish
- Optional: add toppings (banana slices, walnuts, pecans, dairy free chocolate chips)
- Pop in a 350 degrees Fahrenheit oven for 25-35 minutes. Keep an eye on it.
- Once its done let it cool. Then slice and serve.
