We are doing something a little different this week by sharing a paleo recipe. It’s one of my favorites and a staple in my meal prep rotation. I eat a strict paleo diet with the occasional splurges. But without tasty, easy, quick recipes that are paleo compliant, I wouldn’t be able to.
At first, I didn’t love cooking or traditionally “healthy” tasting meals. I was used to extra processed, chemical-filled foods. So the switch to paleo was rough at first. Now my taste buds have changed and I crave foods packed with nutrients and clean ingredients. While I was going through the change of eating healthy my mom started experimenting in the kitchen. We choose to share our bell pepper soup first because it’s actually a paleo dupe to a meal my mom made all the time for me growing up.
I debated on what to actually name this meal because it reminds me of a paleo hamburger helper. But it really is a soup due to the bone broth. Let me know once you give it a try if the name “Paleo bell pepper soup” or “Paleo hamburger helper” fits better.
This meal is super quick and a great choice for meal prepping. I’m very picky when it comes to eating days-old food……. multiple days in a row but this is one of those meals that are just as good the first day as the last. It is a great starter meal if you’re just now dipping your toes into the world of meal prepping!

Paleo bell pepper soup
Ingredients
- 1.5-2 lbs grass-fed ground beef
- 1 large onion petite diced
- 2 large bell peppers diced I use green and red
- 15 oz can of roasted tomatoes
- 15 oz can tomato sauce
- 3-4 cups bone broth
- 4 garlic cloves minced
- 1-2 tsp Basil dried or fresh
- 1-2 tsp Oregano dried or fresh
- 1 tsp Ground red pepper
- 1 tsp chili powder
- 1/2 tsp salt ( or to taste)
Instructions
- Petite dice onions and bell peppers. Mince garlic
- In large pot brown ground beef
- Add petite diced onions, bell peppers, garlic, and seasonings to pot. Cook for five minutes – stirring throughout.
- Add roasted tomatoes, tomato sauce, and bone broth. Bring to boil, reduce heat to low, cover and simmer for 15-20 minutes.
- Served on cauliflower rice or you can drain and serve on lettuce wraps
